Grandmother's Royal Kheer (With Scientific Precision)

Ingredients:

  • 1 cup Wahla Farms Shredded KALAR Rice
  • 1.5 liters full-fat buffalo milk
  • 3/4 cup organic cane sugar
  • 8 green cardamom pods (bruised)
  • 1/4 tsp edible camphor (optional)
  • 20 strands saffron (soaked in 1 tbsp warm milk)
  • 2 tbsp chopped pistachios & almonds

The Wahla Method:

  1. Soak rice in 2 cups water for 18 minutes exactly (optimizes hydration)
  2. In heavy copper pot, bring milk to boil stirring clockwise
  3. Add drained rice and cardamom, reduce to 82°C (use thermometer)
  4. Simmer uncovered for 47 minutes, stirring every 6 minutes
  5. Add sugar and cook 13 more minutes until 22% reduction
  6. Remove from heat, stir in saffron milk and nuts

Serves 8 | Perfect viscosity at 68°C serving temperature
